Memories of the Industrial America - Bishop Rustbelt Messiah

As a Polish/Native American growing up in the American Rust Belt, I contextualize the rich cultural hybrids I experienced.
On cold winter days, where my tiny house filled with the smell of garlic, steam, the cranking of the sausage grinder and Polka music in the background.
I can still feel the energy and the excitement of producing our own homemade sausages.
My father would make traditional pork kielbasa along with a Native American versions with fresh vegetables, buffalo and venison.
My versions of sausage range from traditional kielbasa (Dad's Recipe) to vegan shawarma, Artichoke “crabless” Cake, Sweet Potato, and Mushroom.
